Using wikipedia as my source:

Camille is at The College of William & Mary.

Jessie is at FIT

PC went to Rollins College in Florida but left to go back to NYC. No idea what he is doing now.

I assume Sebastian and Taylor are still in school.

No idea what happened to Kelli. She seemed to still be friends with Camillie post-NYC Prep.

I miss the show, too!!!

I was waiting almost a year for a second season, then in the summer I got in contact with the producer of the show. I asked if NYC Prep would be coming back. Sadly, he said no, due to the fact that the first season didn't get high ratings.
