I like Spanish or German sausage, big, juicy and meaty with the casing all intact. I could finish off a big bunch of them with a flourish, wipe my mouth with the back of my hand and start all over again.
Zola - when my silly german great grandparents left the mother country they thought that they should remove the casings from their sausages. The family has suffered ever since.

I've had a lot of Jewish sausage but I always feel so guilty after eating it. Argentinian and Brazilian sausage is quite good expecially during Carnival. I once had Chinese sausage, but it didn't satisfy. I had some French sausage while vacationing in Sitges, but it was only palitable with a bottle of wine.
Leave the silverware aside though -- you should not scrape the casing. These are best eaten directly from hand to mouth.
Sausage eating is a sensual experience - you need to use all your senses to fully enjoy it. Silverware just gets in the way.
