I still haven't seen any of the first three DIE HARDs, but I dunno. I can't really choose. Possibly KILL BILL VOL. 1 if that counts.
Eh, I'll be a geek cliche and take The Matrix. But only the first one, neither of the sequels.

Hands down best action movie of all time is Raiders of the Lost Ark
If you mean action/adventure flick, then The Mummy (1999) has no equal, imo.
For me, it would have to be Raiders of the Lost Ark, with Die Hard a very close 2nd. Raiders is one of those movies that I have such a clear recollection of seeing in the theater. Even though it has been over 25 years, I can remember the theater in which I saw, which friends came with me to see it, and the excitement of seeing the picture.

The Kill Bills are both awesome, but my FAVORITE favorite is The Fifth Element. Bruce Willis is the ultimate action star and Milla Jovovich is a total cutie.
I think of the Indiana Jones flicks as adventure rather than action, so much as I adore them, I wouldn't list 'em here.
Instead, I must draw you back to the mid-late '90s, where Nicolas Cage went through a bit of a phase. In two years, he made three action movies, and even though they weren't necessarily *good*, and even though I'm not such a Nicolas Cage fan, I'm DEFINITELY a serious devotee of these three flicks. 'The Rock', 'Con Air', and 'Face/Off'. Loves!
I'm also terrifically keen on John Woo's 'The Killer'. I guess you could call it 'Face/Off's older cousin from Hong Kong, if you liked. ^_^
JB2, The Mummy is actually one of my favorite films as well. How could I forget about that?

That's a tough one. The first ones that come to mind are the first two Terminators, Aliens, and Die Hard. Hmm....
