God I hate deciding what to make for dinner every night. Hate it. I feel like I have ten different things that I make over and over again. So what do you like to make for dinner? Maybe I can steal some of your ideas for my dinner.
Post your three favorite things for suppertime.
(If I make lemon pepper chicken with whole wheat pasta and asparagus one more time I will scream.)

Posted: 12/4/05 at 8:54pmDo you like chickpeas? This is what I LOVE to do with them: Sauté some onions and garlic in olive oil and/or butter. Add a can of chickpeas and some chicken stock. Let it cook for a bit, and then add a little bit of flour to thicken it up. Yum.

You can get corn on the cob anywhere. A good substitute is creamed spinach
Get a book about the Automat & in the back is a list of recipes that made the Automat famous. Mke it right & you will be a hit

You can get a cookbook with Automat recipes?? That is so cool. And how many people on this board have no idea what an Auatomat is?

Here it is 9:45 and I am just starting dinner. My BF is a dresser so does not get home until late so we are usually eating dinner too late.
Lemon pepper chicken...wheat pasta...tomatoes and aspargus...dull dull dull

I am such a southern cook. My favorite easy recipe is Chicken Pot Pie. It's simple and soooo yummy. I make a killer meatloaf and creamed potatoes. Last week I made Cuban chicken, black beans, yellow rice and fried plantains. I just love to cook.
Hmmm, just remembered one... I put crumbled bleu cheese, pecans and carrots in a food processer. I slice a pork tenderloin down the middle and stuff the mixture inside. I let it cook slow, like 300, for a little over an hour. I serve it with asparagus or some other nice green veggie.
A super easy one is a pot roast/roast beef. Get a good roast from your butcher, braise it in whichever seasonings you prefer, then put it in a pot on the stove or in the oven with some water. I prefer the oven. I like to cut up potatoes, onions and carots to cook in mine. Slow cooking is the key and adding a little butter and beef stock to the water will add to the tenderness.

roastbeef in the crockpot (w/ dry onion soup mix sprinkled on top and then a can of cream of mushroom soup spooned over it.)

Jamie's super-easy sweet 'n sour sauce - Mix equal parts grape jelly and taco chili sauce (like Ortega, not the more authentic stuff that's super-spicy) in a saucepan; heat over medium, stirring until all melted together and well blended and bubbly.
It goes great over meatballs (buy a bag of frozen meatballs at the store and you have an EASY dinner) or over chicken, rice and broccoli. It's simple to make, and a nice way to mix things up a bit.
As for favorite "comfort food" dinners, nothing beats a grilled cheese sandwich made with a thick slice of colby-jack cheese and tomato soup. Classic.

Posted: 12/5/05 at 8:58amTonight I will be making broccoli and cheese stuffed pork chops. Slice them down the side, stuff with frozen broccoli and shredded cheese then use a tooth pick to close it. Bake it around 375 for about 20 minutes or until done, then serve it with veggies of your choice.

Also, a super-simple casserole:
Take 3 boneless, skinless chicken breasts and cut them each into a few large pieces. Lay pieces in a 9x13 baking dish. Distribute 1 bag frozen broccoli (thawed) over chicken pieces. Cover with mix of two cans cream of broccoli soup (you can also use cream of mushroom instead, or even one can of each) and 1/2 cup milk. Sprinkle over the top a handful of crumbled Ritz crackers. Bake at 350 for 30 minutes, or until chicken is done and soup is bubbly. Serve warm with some good rolls or dinner muffins (cheddar cheese muffins are really good with this dish).
This is such an easy dish to throw together, and it smells delicious when baking!
Is there an official recipe-book type thread? If not, I propose creating one...

My pot pie is just as easy... I always make two. I get 2 frozen pie shells and 2 of the Pilsbury pie crusts that you roll out. I take frozen chicken breasts, usually 4-5 large ones and boil them. When they are fully cooked, use a fork to shred them. Drain and mix in either one large or two small cans of "veg-all" (or mixed veggies) and one large or two small cans of cream of mushroom or cream of chicken soup. Mix well and divide evenly between the frozen pie shells. Then I cover the misture with shredded sharp cheddar. Unroll the other two pie crusts and place over the pies. Cut off the edges and pinch to seal with the bottom crust. I brush the top with egg wash and bake at 350 for about an hour. The top will be a beautiful golden brown. It's very southern, but soooo yummy. I think I will make one tonight. Just one, as I have no family here to cook for.

do you own a crockpot? put two fresh or frozen chicken breasts in, then cover with a mixture of the following:
16 ounce jar of your favorite salsa
1/2 teaspoon chili powder
1 chicken boullion cube
Stir the above together and pour over the chicken and cook on low for 7-8 hours. the chicken will shred with a fork and you can serve it many different ways - we put it on wraps, folded in half with fat-free refried black beans and our favorite lowfat cheese (we use soy cheese) then fold in half and bake in our panini press for about 5 and a half minutes - makes excellent quesedillas, topped with tofu sour cream.
Another quick meal - brown half a pound of ground turkey, add a can of black beans with the liquid reserved. into the liquid, stir some chili powder, chicken seasoning and dried onions (or just use a dry soup mix) and pour over meat mixture, simmer until bubbly and great smelling, then spoon into wraps with some cheese and sour cream and roll for a deliscious warm tex-mex sandwich - you can also add some diced tomatoes and mushrooms for a change, and the leftovers are just as good warmed the next day - if not better.

Piquant Pork Chops, Wild Rice and Asparagus Fillo Bundles
Piquant Pork Chops:
4 boneless pork chops (or chicken breasts)
1 can chicken broth
1 tb dijon mustard
1/4 cup lime juice
1 tsp sugar
1 tb corn starch (in separate bowl)
Brown pork chops, then remove and set aside. Using grease from pork chops, add chicken broth, sugar, mustard and lime juice. Heat to a boil, add pork chops, reduce heat and simmer covered 20 minutes. Remove pork chops. Add 1/4 cup broth to corn starch, stirring constantly until thin. Add corn starch mixture to broth slowly over low heat stirring constantly until thick.
Serve over wild rice.
Asparagus Bundles:
Heat oven to 375°F.
Stack about 5 sheets fillo and cut into 6" squares (or larger depending on size of asparagus, you can eyeball it). Brush top with olive oil. Place 4-6 stalks of fresh asparagus (depending on size) diagonally on fillo and wrap like a diaper with asparagus tops peeking out the top. Brush with olive oil (sprinkle lightly with dried rosemary or garlic powder if desired). Bake for 15-20 minutes until golden.
Simple and tasty. You'll love it! Hugs to you and your boyfriend!
