I made a delicious low-fat potato soup over the weekend, but my tofu stir fry didn't turn out so great, because I was low on hoison...

OK, Chocolate Chip Banana Bread!
1 stick of butter
1 cup of sugar
2 eggs
1 teaspoon vanilla
1-1 1/4 cups mashed bananas
2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon cinnamon
1 cup nuts (optional)
1 cup chocolate chips (optional)
Cream butter and sugar. Add eggs then vanilla then bananas. Mix dry ingredients together. Combine dry and wet mixtures. Add nuts and chips if desired. Bake in greased loaf pan at 350 degrees for one hour.
My mom uses stone ware pans, so if you use metal, you can reduce the baking time a little bit. Enjoy!

Posted: 1/7/08 at 3:17pmAn old roommate of mine used to make chocolate banana cookies. These were big fat chocolate cookies (like old fashioned home made sugar cookies) and they had ripe bananas mashed into the cookie dough. The whole cookie was chocolate - no chips.

I'm making this tonight, DGG. I've got a dozen bananas in the freezer and a bag of chocolate chips left over from Xmas cookie baking.

She usually uses semi-sweet, JAG, but either will work.
She's an amazing cook. I'm very lucky.
