The Canadian cast of Rent was, by far, the most talented cast of any show I've seen. And I've seen the current non-eq tour, they don't come anywhere close.
the Bway cast of JANE EYRE (even the young girls were GREAT- unlike some other child actors I've seen on Broadway!)---they were amazing, from Marla Schaffel and James Barbour right down to the swings and every single ensemble member.
the OBC of THOROUGHLY MODERN MILLIE ---again, everyone seemed to fit their parts perfectly and really seemed to be in the 20's- they just worked wonderfully together- I loved watching Marc interact with Angela Christian and Sutton...and the understudies were amazing as well! They just had SO much energy -- great co.
The cast of Thoroughly Modern Millie. Every time I saw the show, the entire company looked as if this were their first performance. It was one of the most talented companies I have ever seen.

Based on the shows I've seen (you know, the four of them lol), I'd have to go with The Producers earlier this year, the second coming of Nathan and Matthew
Out of the ones I have seen (which aren't that many), I would have to say the cast of the touring company of POTO in 2000. Besides it being the first show I have ever seen, the voices were SO much better than those on the OLC and they just made the characters come to life and emotions were drawn from me by the Phantom at the end (I mean, I started bawling). It was THE best theatre going experience for me so far.

HAIRSPRAY last December !!! I'd have to say that, although I didn't really like Cathy Brier, the rest of the cast (Harvey, Matt, Dick, Barbara, Mary, Jackie, etc.) completely blew me away !!!! And also BOY FROM OZ had a fantastic ensemble, besides incredible Hugh !!
Avenue Q's cast is all amazing and very talented and animated. Also they were very nice and friendly @ the stage door. They were just very cool with everything.
The original Las Vegas company of Mamma Mia! was exceptional.
