I will be in New York from August 4-7 (I am not looking for shows to see, I already have the 5 picked out), but I was wondering just incase I might change some dates or make room to see extras, is there somewhere that I can view the Broadway Schedule during that time? I know some shows are adding or changing there weekly schedules for the summer, and the playbill schedule does not list when the shows play over the summer. I know that Baby It's You will be having Friday matinees, are any other shows having weekday matinees?

Rock of Ages will also have Friday matinees while Chicago will be doing Thursday matinees.
There is not often a large change to the schedule. SOME shows that play matinees on both weekend days, may often switch to only one show on Sunday (mat) and put another on Wednesday.
I don't know of another site that lists these things, I'd keep checking in with Playbill. OR, check with Telecharge (or whomever) I'm sure the schedules are changed with them) if there are only a few shows you are interested in.

Also when you are in NYC there is a Information Center in Times Square on 7th Ave (East side) between 46th & 47th streets. Between the Palace theatre & McDonalds & across from TKTS booth. They have charts (updated every week) of all shows & show times.
