Now, maybe I just hold too high of a standard, but I am only convinced that two characters are in love in a couple of shows. Here are my listings.

POTO: The Phantom's love for Christine
West Side Story: Tony and Maria
Miss Saigon: Chris and Kim
Beauty and the Beast: Belle and the Beast

Honestly I wouldn't say the Phantom is as much in love with Christine as obsessed with her... thats only my opinion though.
I think that Raoul and Christine are believable as well.
I think depending on who's playing them, Collins and Angel are believable from Rent.
Cathy and Jamie from the Last 5 Years.

Others that come to mind, while it may be somewhat funny is Princeton and Kate Monster in AVENUE Q.

I have major, major issues with the Mimi and Roger relationship. And I love Rent. It's just not a good relationship, and extremely unconvincing. They might be "in love," but it's one of those dysfunctional, ultimately detrimental kinds of love that probably won't be good for either of them. I'm never convinced at the end of Rent that it's happily ever after for them (even ignoring the sickness part). I could go on about it for ages about what I see as being wrong about this relationship, but main issues: how are we to believe that Mimi, a too young, drug-addicted erotic dancer is going to suddenly give up her vices and be faithful to Roger? The relationship also starts off on rather questionable grounds when Mimi obviously intends to seduce Roger without ever telling him that she has HIV. I think that Mimi is a good person at heart, but she's a good person who will ultimately fall victim to her self-destructive tendencies, and take Roger down with her.
