I love Phantom's current program. It's very nice....and I wish they would update Wicked's and Hairspray's programs, so much (if not all in Hairspray's case) of the cast is different!

I really like the layout of Dirty Rotten Scoundrels, the pictures of Light in the Piazza and Wicked, and the story in Rent.

I wish the RENT program had more pic.s in it. The story in it is like a cut down of the RENT "Bible", isnt it?
I really like the Hairspray one and the Little Women one.

Mary Poppins (but mine doesn't have that house thing someone mentioned...oh well)
Gypsy (LuPone)
Spamalot
Evita (touring production with Kathy Voytko)
Curtains (not that the program was anything extra-special, but b/c mine is signed by pretty much the entire principal cast and looks so nice in its frame with the poster...ahh...I loved that show.)
The one I'm surprised to see on people's lists is Wicked. I bought one when I saw the touring cast, and in retrospect, while the pictures are very nice, I'm a little ticked for paying $20 for nothing but giant pictures of the original cast. I like some words in my programs (hence my love for my Gypsy and Evita ones).
I love my Mamma Mia one that I got last week. My only complaint is that it needs to updated something fierce. Sure they pics from all over the world but NONE of the cast you are seeing.
I really like Young Frankenstein's program. It has a bunch of pictures of the original cast with a page for each main character. I think they put in an insert with the current cast, but i'm not sure since i got it when the original cast was still in it!
My favorites include the original La Cage aux Folle, with the pop-up of Zaza (George Hearn) on his swing, the original Rent, that looks like an old school compostion tablet, Chitty Chitty Bang Bang (with a removable car to make, the original A Chorus Line (with the b&w fold out of the line, the oversized original Chicago revival, actually, I could go on and on. I love collecting programs of the shows I've attended, and have over a hundred.
I second the Chitty Chitty Bang Bang program with the "foldable car". I also like the program of Spamalot (hilarious!) and Jersey Boys in London (which looks like a worn out LP cover).
