Finding Neverland doesn't have traditional double or multiple casting (as in the 3 or 4 Matildas). Their 6 or 7 boys play 4 parts in the show. Some of the boys play as many as 3 different parts on different days, much like a swing would. Even the "main" lead boy Peter plays smaller parts on other days.

I believe in general all children's roles in London are at least triple cast. I know Matilda has four Matildas, four Bruces, and three children's casts otherwise. Lion King has four young Nalas and Simbas, and Charlie has four Charlie's and three each of the other kids.

Yes even the chorus kids are cast in groups... Like the ballet girls in Billy Elliot were. There would be 3 or 4 groups of girls that would rotate with the Billys.

On Broadway, How the Grinch Stole Christmas had two casts - red and white. Here is the link to IBDB: https://www.ibdb.com/Production/View/438379
Fela was double cast as well, I believe Sahr Ngaujah and Kevin Mambo each did 4 performances a week.

Phantom still has a few Christines in NY.
Curious Incident has 2 Christophers. (sorry if these have been mentioned already)
Jersey Boys has a double-cast Frankie now? Dominic Scaglione Jr. does three shows a week and Mauricio Perez (who is fantastic and comparable to John Lloyd Young's Frankie) does four shows a week. Used to be Joe Bwarie does 6 shows, Dominic doing 2 matinees.
MOVIN' OUT ended up with a full second cast about 6 months into its run due to the physical demands of the show. The alternate cast typically performed the Wednesday & Saturday matinees.
