I believe sometimes they can be used in touring or regional productions.
Parts are used for the touring set if the production will tour, typically, or if not, they'll be put in a warehouse and eventually sold or trashed.
Lots of pieces end up in the garbage right away. There are folks in NY that go dumpster diving to see what they can retrieve.

The Merv Griffin Show set ended up in Kramer's apartment.
I believe most get destroyed if they aren't being used for a touring production.
A lot of tour sets end up being purchased by regional theatres and made available for others to rent. I know the Madison Square Garden Wizard of Oz set is available to rent as well as the tour sets for The Producers, Hairspray, The Full Monty and South Pacific to name a few.
You know I think once a show closes the producers should give some of there set/props to the B'way flea market and auction them off and get money for equity fights aids!

My high school went to a production of Much Ado 2 years ago and met with the cast. They were closing that weekend, so they kindly gave us their perfectly working water fountain (under the condition of course that we picked it up!)
They sold the "SHOOT TO WIN" sign from the Roundabout production of Assassins on ebay. I don't remember how much it sold for. It wasn't a lot. In fact I almost bought it myself. Of course, who has space to hang it.

I know some shows, after they tour, will sell props and costumes to theatrical rental companies. I remember seeing a site that listed most of the original Into the Woods stuff to rent, including the witch's staff, milky white and other stuff.

Citygirl, I know that very often the costumes will end up with regional theaters or rental companies to be rented out. For instance, off the top of my head I know that Goodspeed owns the Sunset Blvd costumes and Maine State Music Theater owns the Rent costumes and the West End Spamalot costumes.

I think a lot of the costumes end up in the TDF's costume collection and can be rented. The last time I was looking at the web site I was surprised by how reasonable the rental fees were.

I have been told a warehouse in New Jersey. At least that is where they put the Billy Elliot set.
I know there are several sets of costumes from Beauty and the Beast that are rented out to high schools all over the country.

Most sets are are dismantled (read sawn and sledgehammered into pieces small enough to get out the door and thrown away. They are built for the theaters and and not for traveling. Sets for touring need to be specially built in pieces to fit all venues, and light enough to transport and put together quickly. Not to say that Broadway sets are *never* used for touring, but it's not the norm.
Some costumes are discarded, some given to actors, most are sold or donated to a costume shop. The same is true with props.
Over the past decade, an effort has been made to waste less, and an organization called Broadway Green Alliance (I think) collects and allocates some materials for repurposing.

Not the sets so much, but small props are often donated to BC/EFA for sale at the fleamarket.

I guess on rare occasions the star gets to keep some of the wardrobe since Carol Channing still has her Lorelei and Dolly gowns.
