I really enjoy the smaller revival orchestration of Sweeney Todd. And I like the movie orchestration of Phantom; it's very full and very lush.
How about Billy Byers' fantastic jazz charts for City of Angels?

I love the orchestrations for A Little Night Music. I also love all of the writing I've read by Tunick about how hard it was to add the brass into the orchestrations (Thank god for Count Magnus!). I love the most the end of the reprise of Send in the Clowns when the music dwindles down to a few instruments and then slowly builds and swells into the waltz at the end.
