Do shows get notice when critics are attending or is it a surprise attack?

There are press nights, right? Designated nights for the press to come?

There are several dates designated as press performances, some just before and some just after opening night. Critics receive invitations from the press agents weeks in advance and they rsvp for the dates they want. Actors may not want to know exactly who is coming when, but they are aware when a performance has been designated as a press date.

There are no surprise attacks (except in cases like the Spider-Man preview reviews). Critics are invited by the show's press office to come on specific nights that have been pre-determined by the producers and director.
