I have to second the suggestion of "Make Our Garden Grow." Gah, that's gorgeous. I watched it about 7 times in a row when it aired on PBS.

About half of the songs in Children of Eden, but in particular the Finale, "In the Beginning". It's just a gorgeous chorale style song with a beautiful message.
I also want to third "Make Our Garden Grow" and second "Sunday". And for "Sunday", I would look into getting a hold of Jason Robert Brown's arrangement. It's incredible, though I doubt it's availible.
