Pulp Fiction is brilliant. I love that the beginning and ending are the same scenes.
Best opening songs: Donnie Darko (NOT the Director's Cut. They used a blah song for the opening in that version) and The Boondock Saints. Irish music rocks.

Most horror movies have good openings. I also like Urban Legends.
Bram Stoker's Dracula
The background story of Dracula's past is done sooo well!
The opening of WEST SIDE STORY and THE SOUND OF MUSIC are basically the same, except one is the NYC skyline and the other the Austrian alps. It's no coincidence that they share the same director.
I really loved the opening scene of The Matrix.
I'll second Halloween and Scream as well.
Kill Bill Vol 1 deserves a mention also.
Ohhh, Lion King is a good one. I also love Chicago's [All Tha Jazz--wow] and Bridget Jones' Diary's [when she sings All By Myself].
