I make lots of salads!

Here are two of my favorites - both are simple.

Sprinkle a boneless chicken breast with olive oil and yellow curry. Bake or grill till done, slice. Serve over:
Mixed greens
Grape tomatoes
Chopped cucumbers
Raisins
Walnuts
Some type of chopped cheese if you prefer (for some reason, this one tastes good with sharp cheddar -- I know it sounds weird, but it's tasty)

I like this with a cool, slightly creamy dressing like Brianna's poppyseed, or a yogurt based dressing.

Here's another yummy one:
Mixed greens
Grape tomatoes
Chopped cucumber
Feta cheese
Dried cranberries (like Craisins)
Sunflower seeds (unsalted is better)
Balsamic vinaigrette

Toss together with dressing before serving, so the feta coats the greens.

My pasta salad was a hit. The lady who makes the incredible salad got her dates wrong and brought her Chinese Chicken Salad that blew everyone away and I was afraid mine would go uneaten. But it didn't. We have plenty left of both- anyone in the area hungry?

Simple salad with grapefruit slices and guacamole.

Sounds good Borstal--I also like watermelon and goat cheese.

I've found that fruit tastes AMAZING with some high-quality olive oil drizzled over it--especially if it's a lemon oil--it'll really surprise you--it makes the fruit taste like it has cream in it, most notably on pears.

I love seaweed salad! I just pick some up wherever they sell the prepackaged sushi.

Greek Chicken Pasta

This made a lot of salad- feel free to cut down quantities or leave out ingredients for your taste!

1 Package dry pasta (I used ditalini)

Prepare according to package directions. Meanwhile in a large bowl, make (or pour in!) your favorite vinaigrette. Here’s what I did:

1 package Good Seasons Italian dressing
¾ cup good vinegar
¼ cup olive oil
A clove garlic, mashed

Mix together and start tossing in your ingredients! I used:

1 small cucumber chopped
1 small red onion, chopped
1 green pepper chopped
1 can Garbanzo Beans
Several tomatoes chopped (or a pint grape tomatoes)
1 pound feta cheese chopped or crumbled
1 rotisserie chicken, boned & chopped
Black Olives

Stir in each as you go, so they have a chance to soak up the dressing.

When ready, stir in drained pasta- the key is to drain it when still somewhat undercooked and mix it in to the salad while still hot- it will finish cooking and soak up the dressing in the bowl. Cover and refrigerate over night. Enjoy!

That sounds good, Joe! I'd probably leave out the chicken, only because my idea of a salad means you don't have to cook anything!

You can also make a salad by deconstructing other dishes:

make a chunky salad out of gazpacho ingredients

a "dressing" salad made with cornmeal croutons, celery, dried cranberries, mushrooms with a buttermilk-sage dressing


another little tidbit: pureed artichoke hearts (from the can or bottle) make an excellent salad dressing though it doesn't sit well after a while--it looks kinda icky the day after. You might want to strain out any fibrous bits that dont get pureed.

I actually made a Gazpacho salad here once- I'll do it again when local tomatoes are ripe!

Diced ripe (preferably home grown) tomatoes
Green Pepper
Red onion
Peeled seeded diced cucumber

Rdd Wine vinegar
a few dashes hot sauce or red pepper

It's also great if you dice up some stale French bread and toss it all together the night before but the ladies here preferred the "Weight Watchers No Points" version!

joe--I think red pepper really makes gazpacho sing...you might wanna try that next time too.

Pasta salad

Cucumber cut into small cubes
small cherry tomatoes
very small sliced onions
1 pound tri-color pasta
a half of a small container of salad supreme (in the spice section of supermarket)
Kraft italian dressing


Cook pasta. Mix in onions, cucumbers, and tomatoes. Pour in full bottle of the italian dressing and half contianer of salad surpeme. Mix and refridgerate.

Here's my favorite salad (and my lunch 3 out of 5 days a week):

Toss some mixed greens in with red grapes, pears, pistachios, dried cranberries and gorgonzola. Toss with a very little bit of basalmic vinagrette (it doesn't need much with the cheese).

Actually The BBQ Salad came from loving it at Birdland and I tried to make my own version. Birdland's is still better but mine is pretty amazing.

I made a new version today with corn, stringbeans and snowpeas.
DELISH.
