My office has a "Salad Club" where every Wednesday we take turns making salad for the rest of the group for lunch. We've been going about a year and a half and I can not think of anything to make tomorrow- it seems like we've done it all. There is a unspoke undercurrent of competition involved- we have one lady who's really raised the bar- she made Asian Chicken Salad, a fabulous strawberry spinach salad, goat cheese salad- all knockouts.
The group is pretty omnivorous and "salad" can be very broadly described (we've had chili and tamales). I scored with a Crabmeat salad and a huge pasta salad with roasted vegetables.
Does anyone have any incredible secret recipes they'd share?

My favorite is:
Marinate a large salmon fillet over night. I use fresh ginger, scallions, orange and barbecue sauce. Then put it over:
Greens, scallions, pineapple and snowpeas.
DELISH!
You can also add grape tomatoes, corn and stringbeans.
Serve cold.

Salad's like pizza. Keep it simple with four, five ingredients tops or else it's just too much.
One of my favorites is a combo of dark greens, grilled chicken, blueberries and gorgonzola with a light vinaigrette.

The New York Times cookbook salad I used to fix every Thanksgiving, and everyone loved:
Fresh endive, Granny Smith Apples, walnuts, crumbled blue cheese, and a walnut oil flavored dressing (though any classic will work).

Yes, Sueleen.
I actually marinate salmon in ginger, scallions, fresh orange and terriykai/bbq sauce over night. It is scrumptious.
I then serve it cold over veggies.
You can also marinate for three hours but it is not as flavorful.
And I get the salmon fillets from Jacks 99 stores but with the sauce you can't tell it is lower grade salmon.

I got this from someone I work with and made it for a couple of family parties and now I am instructed to make it for every family party:
mixed greens
roasted red peppers, drained and sliced
sundried tomatoes, drained and sliced
crumbled goat cheese
a couple of sliced avacado, squeeze lemon juice on them to prevent browning
toasted pine nuts (be careful toasting, they burn easily..just a few minutes in the oven)
I used Annie's Goddess Dressing.
Delicious.

One Beet Salad: Mix roasted beets (I use a mix of red, gold and striped) cube and toss in olive oil. Top with creme fraiche, bits of smoked trout and finely diced chives.
2nd Beet Salad: Toss your roasted beets
in truffle oil and top with roasted poblano peppers and thinly sliced kumquats.
Chicken Avocado: Cube cooked chicken breast (I prefer to sear it first) and mix gently with cubed avocado, a mashed clove of garlic, some sour cream or mayo and lemon juice. Salt and pepper to taste.
Tuna Salad: Drain one can of tuna in olive oil, drain a can of cannelini beans, and diced half a red onion. Combine all with some olive oil and lots of fresh pepper.

Corrine, do you cook the salmon?
That strawberry salad was EXACTLY the one I was thinking of making, SOMMS!
And I think I might have to make the Avocado, Goat Cheese salad New Girl! That sounds RIGHT up our alley! But it's my turn in 7 weeks so keep 'em coming!

The salmon from JACKS is fine. Didn't any of you read the column about it in the New York Times?
A star chef prepared a glorious meal with frozen salmon from JACKS.
Joe- I cook steam the salmon in the microvave until it is cooked. After it is cooked I marinate it in the sauce overnight.
I then remove the excess marinate and make a fresh batch as dressing.

It sounds a little weird, but it is wonderful:
Rocket
Sectioned grapefruit
Avocado
Save the juice from the grapefruit and mix in a little salt, olive oil and a couple of drops of hot chili oil. Toss and serve. Sometimes I add a few pine nuts for cruch. Yummy!

Dressing: equal parts(I think) white vinegar, oil and sugar. I hate most salad dressing and vinegar on the whole, but I like this dressing,

I've got so many ideas! I was going to request a salad club furlough but now I'm ready!
Meanwhile, I was so tired tonight I bought a roast chicken. I'm going to cut it up and use it in a basic greek pasta salad- black olives, red onion, cucumber, garbanzos, peppers, feta, pasta in a greek vinagrette. I can put it all togethre while the pasta boils and it's a hit!

At last, a thread that's a keepeer. I do love the idea of that roasted beet thingy with the creme fraiche and trout. And the romanine/craisins walnut number -- terrific.
How about a BWW cookbook? I've got a great chilli.
