Havarti, any form of it. (Especially herb and garlic on crackers.)
And my least favorite cheese (not that this was part of the question, but something I was thinking about yesterday) is asiago.

Jane, what's raclette like? My brother said he had it for dinner a few nights ago; something about it being sort of like a hot pot/fondue set-up, and you get bread, cheese, potato and meats? Sounded divine but I've never had it before!
