There's a good one from season two called Parasites, with Michelle Pawk in an interesting role. It also has memorable but "blink and you'll miss them" cameos by Yuka Takara and Michael Berresse.
There is a 2004 episode titled 'Bound' that features Jane Krakowsi and Anthony Rapp.

2005 #7.6 n"RAW" with guest star Marcia Gay Harden. the less said the better- just watch it.
"Zebras" (last season's finale) and "Families" (season 5) are two of my favorites
There's an episode from season 3 that's always been a favorite of mine called COMPETANCE. Check it out, it's still one the series' best.
There's an episode called UNDERCOVER, where Benson goes undercover at a prison that's wonderful. Mariska Hargitay was brilliant in that episode.

I second Joe's suggestion. MGH returns in at least one other episode - great character. Love her accent.

I watched the MGH episode & her other episode & now I'm in the middle of the Dani arc.
I don't have any suggestions because I think procedurals are a blight on the television landscape, but I did just find out that Julie Brown was in an episode of CSI which intrigues.
2000: Baby Killer, Sara Ramirez plays the very upset mother of a child who kills another child.
2002: Chameleon, Sara Ramirez plays a mouthy hooker in the first five minutes and it just slays me.
Do you detect a pattern?
I love the RAW episode. Love the scene at the end with Munch and Fin! MGH is brilliance in this episode.
Season 3: Competence (already been recommended, but I second it. So good.)
Season 4: Chameleon (sociopathic hookers are always fun), Appearances (Carolee Carmello pops up as a pageant coordinator, and the episode is just pretty awesome), Angels (if you're an Arrested Development fan, seeing a pre-GOB Will Arnett as a pedophile travel agent is a lot of fun)
Season 5: Loss (INTENSE), Head (Amy Sedaris cameo! And a really interesting case!)
Season 6: Charisma (ALSO INTENSE, cult episodes are always good), Weak (Amanda Plummer is amazing in this one), Goliath (really worth watching for the line "I want to subpoena Donald Rumsfeld" alone)

One of my all time favorites is "911." First broadcast in Oct 2005.
Benson is on her way out for the evening when a call comes in from a little girl who says she's locked in a room alone. While trying to draw the girl out, Benson is drawn deeper into the little girl's life, and although the other officers begin to suspect the whole thing may be some sick joke when they find holes in her story.
But Benson is convinced that the little girl, Maria, is the real deal. By talking to Maria, Benson is able to ferret enough information from her so that they have a place to start, but Maria's captor has an affinity for electronics and has done everything he can to make sure that no one can find the little girl he has kidnapped.
This was the episode that she submitted for Best Actress consideration at The Emmys, and she won for Best Dramatic Actress.
That episode was fantastic, definitely one of the best of the entire series. I can't believe it aired 5 years ago!!!
Yes, it's fantastic! It just aired again on Sunday during a USA channel L&O SVU Marathon.

Watching "Competance" right now. Truly one of the best ever.

There's an excellent episode entitled "Recall" from 2006 in which Guest Star Leslie Caron gives a magnificent, heartbreaking performance. She received a well deserved Emmy.
The one where Cynthia Nixon plays a woman with multiple personalities is really good. She won an Emmy for it.
And the one where Stabler masquerades as a pedophile in order to catch one is good too (though you'll want to take a shower after you watch it).
There's also one called "Burned" and it's right after Mariska Hargitay comes back after being undercover. It's a really powerful episode about two parents and a custody fight and lots of other crazy stuff.
