Well, I'd argue that Courteney Cox got her "start" long before she was on Friends. That was certainly the pinnacle of her career thus far, but she had Family Ties and that Bruce Springsteen video long before Friends.

I think that women-playing-baseball movie jump-started a few careers. Can't think of any names offhand, though.
