So when my 120GB iPod dies, I'll be stuck with some stupid iPod touch that will only carry a fraction of my music library?

You can get an Android based music player/phone with expandable storage.
For example, my Samsung Galaxy s5 phone can be expanded to include an 128 gb microSD card, plus the original 16 or 32 gb its comes with...

Well, I was looking into getting one, guess not!
Currently, I have half of my music on an old Creative player (40GB and great sound but SOOO clunky now) and an ipod touch... both are full. I wanted one devise for all...and have room to expand.
Alas, I guess I'll settle on another iTouch.
Another bad thing is the Creative is so old, I don't have the software for it anymore. i have no idea how I'd transfer it's contents.

I was an early adapter of Beatsmusic.com (pre-Apple buyout) and it works really well when I attach my iPhone to my car stereo through the aux cable… and also, I can stream my large iTunes library to it as well… so I see the benefits of having an iOS-based music player… But I don't like draining my phone battery to listen to music I want to here and I don't need another thing that looks like an iPhone, I already have enough trouble grabbing the thing I don't need when I run out the door.

I managed to snag one for $250 online last night, but the seller is now listing the item as "DISCONTINUED."
I guess Apple just isn't interested in providing serious storage for music fans. Will some other company pick up that slack?

Apple is intentionally moving people away from high-capacity music storage, because they've figured out that they can make more money but selling lots of music, but making OWNERSHIP of that music harder. Instead, people buy music on their iTunes account, listen to it here and there on their various devices, but now spend more of their music time on Spotify, iTunes Radio or Pandora listening to curated "playlist" style radio, and clicking on songs for them to buy.
Apple makes less money if you listen to the same music over and over than if you are constantly streaming and buying new music for a temporary fix.
