I am a big fan of gourmet imported cheese. When I am down in the dumps and need some cheering up. I take out a nice china plate and place a small slab of Velveeta on it. It is best to let it ripen slightly at room temperature to let the full flavor bloom. Next, I take my finest Waterford crystal glass and fill it with a fine vintage Manishewitz wine. Sure, this very extravagant; but I am worth it.
Smoked Gouda or some really evil Brie . . .
Some nice red wine . . .
Oooooohhhh. . . Nirvana approaches.

Cheese is amazing. I like to claim that I said "I like Cheese" before JLT coined the phrase...because I totally did.

I am just about to start making my puff pastry stuffed with dill havarti cheese, AMAZING!
If you don't have the time to make the puff-pastry (which takes me two days) you can just use Pillsbury Crescent roll dough.
ugh, NEVER fondue......trust me, once you go to Gruyere, Switzerland, and have fondue at one of the cheese factories, you will NEVER, EVER want fondue again. AND.......don't ever have Gruyere fondue and carbonated beverages such as coke...etc. IT AIN'T PRETTY.........even 2.5 years later the thought of fondue makes me want to.....well, nevermind!

I like cheese so much that sometimes I don't even bother slicing it and I just eat it from the whole chunk! I like almost all kinds but my favorite is raclette.
The bf and I often head down to Murray's--it's close to his apt--and just ask the counter guy to let us try the wildest stuff they've got--we always come away with two or three great choices and it's not all that expensive considering the quality of cheeses you get.
A nice smoked gouda with toasted baguette and some wine...HEAVEN.
