I am writing to ask for advice. My parents are coming into town this weekend, and I'm considering buying tickets for them to see a matinee on Sunday – the day of the Tony Awards.
What do you think the chances are that nominated actors will be out of the show that afternoon, preparing for their big awards night? The ones I'm thinking about are Gypsy, In the Heights, and August: Osage County.
Would I be safer with one of those than the others? Thanks in advance for any advice.

Actors are generally "in" the day of the Tonys (though the day before is more of a crap shoot). Most actors talk about doing a matinee, then rushing to the Tonys that evening.
With regards to August: Osage County, I'd say your odds are VERY good, considering it will be the final performance for much of the cast, including likely Tony award winners Deana Dunagan and Rondi Reed.
I doubt very highly Lupone would be out of Gypsy.

The performances on the Tonys are live! No taping for broadcast...
Actually all performances are recorded incase they are needed for some reason or another during the live broadcast.
I have no idea if there is any official reason why. I was speaking from my own experiences, where I have seen understudies the day before the awards, but never the day of.
