I plan seeing Aladdin on a Saturday night soon, my only question is does James Iglehart do the show as Genie on most Saturday nights?

Unless previously scheduled to be out or something happens, he should be in. Currently from his social media postings he's on vacation, so I'm not sure if that would be during the time you're going.

He was on the Saturday night I saw it. I don't know his schedule, though.

Saturday night's performances are probably the safest bet for having all of the cast performing...unless there are planned vacations or unexpected illnesses, etc.
