Is January 14th her last day in the show? Or are there whispers of an extension?

I also would not be surprised if we don't hear about it for awhile.
On the one hand, she is getting ridiculous adulation, which must be a great aphrodisiac. The drop in grosses when she was gone puts her in position to command historic income during contract re-negotiation (if she is not already there, in which case it would be even more historic).
On the other hand, the demands of live performance may position her to call uncle when her contract runs out. She will be 72, not 52, and it is a musical; although I do imagine that she could push to do only 6 performances a week. Further, the incredible press that she has gotten, coupled with the record (for the Shubert organization) Hello Dolly box office grosses -- apparently solely due to her presence(which is a terrible shame, if that is true) -- probably has Hollywood scrambling around to find the right property (ies) to leverage her 're-energized' fame. That can be quite the boost also.
The thing that I don't can't even guess at. Will she ever retire; or at 72, coming off of arguably the biggest success of her amazing career, will she decide to cut back on her hours by doing an occasional film (again, I imagine Hollywood will be knocking with renewed vigor) or some 10 show a season show on Netflix or HBO or Amazon or Hulu or...or...or? All would seem to be less demanding than performing in HD for another year

Bette definitely is open to doing television. Goldie Hawn recently mentioned that she, Bette Midler and Diane Keaton were almost set to star in a new Netflix series but negotiations didn't pan out.

Ok, but Hello, Dolly! still makes a decent amount of money without Bette. Everyone blew it out of proportion when Bette took a week off. Yeah the show dropped by like a million dollars, but the show was still making more than most shows do in their best week.
They'll probably replace her with another diva after July 14 that will continue to bring in an audience.

My guess is that she will extend and a announcement will be coming shortly so they can generate ticket sales with the same fever they have now. I also have a feeling based more than on wishful thinking that they have already secured the rights to film this production with her. The on demand and video sales with just her name would be incredible. But probably not released till the production has closed. With the exception of her "Kiss My Brass" tour; all her productions have been preserved.

Certainly makes sense. That might be the quid pro quo for extending. And, since it is likely the closest we are ever going to get to a remake of Hello Dolly (I am one of those who thinks the movie is pretty bad overall, although there are some things that I do like), I am all for it. It would be interesting to see what kind of revenue it could generate on Fathom Events. I don't have the impression that anything has 'killed' to date. Given all the publicity it has gotten, this might be the one.

She is NOT open to TV. She said her sitcom was too much work. The Netflix series fell apart because the script sucked. She will extend because it gives her the opportunity to perform and still stay at home where she wants to live. She's like the Energizer bunny, she has been quoted as saying, "if you don't perform and keep busy, you die"...
