I'm not sure if there ever was a musical version of it, besides a regional theater version of it, but Great Expectations would make a great musical. Also, perhaps you could make Gone with the wind work...
Also, my absolutely favorite book of all time is The 10th Kingdom, but it is technically a TV movie as well. But still, it's still so well written.

The Canterburry tales - in a spoof sort of way the scarlette letter? the crucible macbeth might be interesting. my highschool did a production of as you like it, set it in the 60s, and put music in it and it was actually very good (and yes my highschool's theatre department is quite pretentious :)
