I think people tend to discredit the score because it's a pop score and its not that serious, but I think it has some really catchy melodies in it, just as much as Phantom, Wicked, Rent, etc. I think all the PINK just scares people off.

I don't really call it a "non serious" score. Sure it's based in fluff, but there are some very nice lyrics in it, and, laugh if you will, but anyone who can make that many words rhyme with "guys" deserves some respect.
And honestly, the score is downright catchy. I'm as big a fan of Sondheim and LaChiusa as anyone on here, but what's wrong with a "hum-um-um-um-um-um-able melody?" Though yes, I've noticed the similarities between Batboy and LB. I don't really know La Cava well, but I do remember hearing echoes of Batboy in that as well, even though it's in a much more classical style.
The score is catchy and also touching. I thought the title song "Legally Blonde", not the remix, but the first time Elle and Emmett sing it was very touching. It was great because the whole show is very upbeat and peppy and then suddenly her whole world comes crashing down and the score reflected that and they gave her a very heart breaking and poignant song to sing.

I actually really like the title song.

Actually, the title song sounds more like "Mine All Mine" from the London Bat Boy.
