I also always liked how in the film of the Sound of Music the Baroness did not sing. It really sets her apart strongly
Christine Daee in The Phantom of the Opera

The Kralahome in The King and I, though he was in two numbers till they were cut out of town.
Mrs. Higgins and Colonel Pickering in My Fair Lady
Pickering sings in “You Did It,” does he not?
Early versions of the Narrator in Rocky Horror were a singing role- the character is jokingly referred to as "Mr. Bass Man" in early vocal scores, and was expected to sing a few lines in a comically deep 1950s bass in "Time Warp," "Once in a While" and "Science Fiction Reprise."

Similarly complicated: in Waitress, the character of Jenna's mother is a mute dance/mime role, but her "voice" recurring in Jenna's memory is provided by the recorded and multitracked voice of Sara Bareilles.
The "mute" (also "the wall" in THE FANTASTICKS.

IIRC Demitri Weisman is the very first person to sing in FOLLIES during BEAUTIFUL GIRLS opening number.
