Because if he's not going on as Henry, there's no reason he couldn't play Gabe this evening. He's the understudy for that role. Kyle Dean is not officially a member of the company anymore, so the fact that he is going on as Gabe, not Tim, means that either they needed Tim to go on for Henry, or that Tim is ill/ otherwise unavailable.

Or there could be a change that we don't know about yet. Maybe they are going to two understudies for the young male roles, which imho would make sense. The two characters are such different types. If Aaron is filming Gossip Girl and will be missing a good number of shows, it's possible that they may have negotiated something with the actors that will be announced by a stuffer in the playbill like happens when someone joins a company in between playbill runs.

Wicked is dark tonight so why not have/ask Kyle Dean to do the role if Tim is indeed sick or on for Henry.

I think this is pretty cool actually. It must be a thrill for Kyle Dean Massey to come back and play the role one more time!
It also makes you think what would happen if J. Robert Spencer and Louis Hobson were both out. I am sure that one would be able to perform...but it's fun to wonder what they would do just in case. I mean,how cool would it be if someone like Tom Kitt had to go on for the doctor! (yes, yes, I know it's stupid, but sometimes it's fun to think of what MIGHT happen)

It is a complicated set-up they have. If both Aaron and Adam are out, without being able to call on Kyle Dean, they're screwed. If both Bobby and Louis are out, they're screwed. If Alice is out and Jessica is sick, they're screwed. And if Jennifer is out and Meghann is sick, they're screwed. This is where bigger shows with swings and multiple understudies are at an advantage.

That is almost certainly true. If Aaron/Adam were both out, and Tim had to go on as Henry, they would be able to get Kyle very easily, given who the producer of both shows is. It would be very easy for Wicked to stick a swing in Kyle Dean's track.
This happened at The Lion King once, when Tim Hunter, who had moved on to the ensemble of Aida, had to go back to The Lion King because they needed him to play Simba one night.

It's just weird that Aaron hasn't been back in the production that long and has missed a couple of performances. Unless there is something going on, like a read above about the Gossip Girl taping or he is sick, but it seems like his absences are spread out and not consecutive which be implying that he is not sick, but who knows.

I'm guessing since he's out to film GG, he had it pre-approved. I'm a bit surprised they let him leave to do CMIYC and then leave for a few days for this as well, but it's cool of the producers to let him explore these other opportunities as well. I have a feeling he's going to leave Bway eventually and pursue film/tv, this gives him a small leg up.
