If we are allowed to stray into opera, then there's Pagliacci, where the stage play gets too close to reality and the cuckolded clown murders his unfaithful wife.

Side Show has a few show-within-a-show numbers: Come Look at the Freaks, When I'm by Your Side, We Share Everything, Rare Songbirds on Display, and One Plus One Equals Three.

Not really a show, but "Happy Endings" within "New York, New York" is a brilliant number. So, it's Liza Minnelli playing Francine Evans playing Peggy Smith.
