I feel like a lot of the time shows lean more heavily towards one gender in terms of the either the number of roles or the size of roles. What are shows that pretty equal in that regard?

It varies based on production and ensemble size, but the 1998 Cabaret (which it seems most productions have emulated since) was exactly even, 8 men and 8 women.
