Ok, as far as the Wicked set goes, generally speaking it is the same set all the time. There are only minor differences between each production.
the main differences are in the proscenium arch (the stuff around the stage) obviously if it is a permanent production like NYC London or Melbourne they extend into the area with the boxes (although of those 3 Melbourne is the only theatre with boxes) and as a result they extend in different ways. Even LA that was semi permanent had a huge ammount of space at the sides so they were able to add in the balconies and all that scafolding and vines. Chicago supposedly used the first tour set and the built another set to continue the tour after it left Chicago. Then in that theatre they built in the balconies and all that stuff at the sides, stuff which would not tour well. On the actual tours there is hardly anything around the stage, just a few beams and about 4 gears and alot of that camoflague drapery the army uses to fill in any space between the show's proscenium and the theatre's proscenium. But it looks like in those videos they are augmenting this lackluster proscenium with some printed pannels with images of machinery, and probably will not be using the side balconies (on tour they have 2 platforms that slide on for the balconies similar to how Phantom uses the size boxes.
the same can be said for the bridge in defying gravity. Most productions (Broadway included i think) only have one bridge. London and LA have 2, the second one is closer to the front of the stage and does not go down all the way.
As for Elphaba not flying, I got the impression that what was said about projection was only a joke.

It looked like there was something in Emerald City that actually had towers/spires and such...but I couldn't really tell from the promo video.
Thats just the groundrow in the back that isnt usually in that scene (the shiz university)
Just to compare, here are different versions of the Wicked set. What goes on begind that map scrim is practically the same in all the productions. the only minor set differences are:
some productions have 2 bridges
the tour only has 2 moving things that go from side to side (others have 4)
the drop for elphaba's castle on tour is painted, not an actual metal window.
the tour does not use side balconies.
This is the original San Francisco set from the Curran Theatre.
This is the Broadway set. The Gershwin has plenty of side space to use up.
London has a narrower opening, but because the Apollo Victoria does not have any boxes, they can make side balconies (they also have a huge pipe organ not shown that is half covered with a curtain. This is not part of the set rather part of the theatre.
The 1st Us Tour, no side balconies and hardly any gears or vines at all
Chicago, same as the above set, but with added areas at the sides for the balconies. These add-ons are not currently touring with this set in the 2nd Tour. (at least I dont think they are)
L.A. like Broadway has plenty of room at the sides of the stage to expand.
The L.A. set in the new San Francisco production at the Orpheum.
Germany, another theatre with out side boxes.
Melbourne, they have side boxes but have extended the set over the boxes, since it does not have to tour.

Another thing that I have noticed, at least for the tour, is that the staircase into Elphaba's castle is not as tall. On Broadway the stair case goes all the way off stage.. Glinda enters On the stairs.. whereas on the tour, there is a landing at the top of the stair case that Glinda enters on before coming down the steps..
There have been some adjustments/upgrades made at some theaters for the tour. The Advance Tour Manager for Phantom was telling me about them. I have an article coming up about the Phantom tour and I will include that in the article.
Germany has an AMAZING version of the set! wow!
