Well, I couldn't pick only one myself...it's tough! I've left more than a few out too.
Premiere had an issue a few months ago featuring "The 50 Greatest Movie Stars of All Time". Cary Grant came in first, and I might be inclined to agree.

Sheer skill, I'd say Meryl Streep. But if we're talking "stars" (as opposed to "actors"), I'd say Audrey Hepburn is just...beyond words.

Ed Norton is my god, with Jake Gylenhall, Brad Pitt, Sam Rockwell and of course Johnny Depp pulling close behind. What can i say...I'm a modern kind of guy.

Ed Norton would be my favorite actor, but I don't think he's really the greatest "movie star", per se, if we're making a distinction. This isn't necessarily a bad thing - it allows him to remain enigmatic and disappear into each role. I do love him.
I don't know how I could have left out Katherine Hepburn! And I've loved Ed Norton in everything I've seen him in, with the exception of The Italian Job.
