I wish it were paid more attention to on cooking shows...it's a DELICIOUS bread, and it's got a *very* nifty texture.

that's what I love about it. It's like sourdough for lazy-asses. :) Teff (which is the grain that injera is made of) has a wonderful ability to attract the "wild" yeast spores that are always milling about in the air, and the longer you leave the batter to ferment, the more tang you'll get in your bread.
It's really fun to play with, too. :)
