The "jump set" the use to tour isn't the full set. They have doubles of large elements like the dragon and the deck which can be setup early to cut down on load-in times.

i saw the non-equity tour of The Wedding Singer and it was horrendous.
Shrek will be Equity, I saw it on the Equity Audition site back in December.

What is the differents between a Equity and a non Equity tour and how does this affect the production?
