Plaza Suite was the first thing that came to mind. And I'm ashamed I didn't think of Sleep No More.
Actually Man of la Mancha takes place in a prison. Though yes, they
create an Inn.
The play within the play which is the majority of the show takes place in an inn. Sleep No More is performed in an old converted hotel but it never occurred to me that the action was taking place in one (although I can appreciate that interpretation). I assumed the settings were castles, manor houses, heaths.... just as in Macbeth and additionally, offices and other more abstract venues. Little about the McKittrick in its Sleep No More staging particularly suggested a hotel.
