Doesn't the feeling about who would make the best screen Mimi boil down to personal preference?
If Rueben-Vega no longer looked the part, the producers could have gone with someone like Marcy Harriell. But I'm sure the studios pushed for a more recognizable name.
Either way, it's just a movie.
