I am listening to Matilda and it got me thinking. What performances have been recorded more than once on different cast recordings? Elena Roger in Evita immediately comes to mind.
Les Miz has a few:

Carol Channing on the OBC and revival recordings of Hello Dolly.
Yul Brynner on the original, revival and movie soundtrack recordings of King and I.
Rex Harrison on the OBC, OLC and movie soundtrack recordings of My Fair Lady.
Ellen Greene's Audrey is represented on both the original cast recording and soundtrack of Little Shop.

Joan Diener in MAN OF LA MANCHA (OBC, OLC and French Cast)
Tim Curry and others in ROCKY HORROR SHOW (OLC, Roxy and Soundtrack depending on the person)
Countless other soundtracks featuring original cast members.
Patti LuPone also recorded Mrs. Lovett twice once for the concert CDs and another for the revival. It's fun to compare and contrast how two different directors got two completely different performances from her.
Hermione Gingold in OBC and OLC recordings of A Little Night Music
Donna McKechnie in OBC and London BBC concert of A Chorus Line
Almost all the cast of Fun Home
LuPone in the Sweeney Todd concert recording, and then on the revival recording.
A whole bunch of people from the original cast of Kiss Me, Kate re-recorded the score in stereo in 1957
Ethel Merman also had a third Annie Get Your Gun recording from 1973

Michael Ball is also on the CSR and Philip Quast is on the Manchester highlights recording as well.
Adding to the Les Miz duplicates, Samantha Barks was Eponine in both the 2010 concert and the movie.
Linda Eder was on the first few Jekyll & Hyde cast recordings as Lucy: 1990 concept album, 1994 concept album, and the OBCR. (Also as Lisa Carew on the 1990 recording.)
EDIT: Apparently she also did the 1987 demo recording. The more you know!
