I never thought I'd have this problem (because who has performances on a Monday??), but I'll be in NY on Monday April 8, and there are 3 shows that look intriguing. I only have 1 slot left on the whole trip.
Should I pick Hell's Kitchen, Gatsby, or The Outsiders?
Take Gatsby off your list. Many of us thought it was pretty lacking at Papermill.
Personally I'm more curious about The Outsiders, but only by a little. I think these 2, along with the Wiz are the only new musicals I haven't gotten tickets for .

your best bet would be The Outsiders, but I'd start looking to see if there are any plays with Monday nights Off-Broadway for a better likelihood of having a good time.
I loathed Hell's Kitchen at The Public. Definitely take that one off your list unless you like cliche and boring slice of life stories with no depth.
Ouch.

Ditto on Hells Kitchen. Awful . Think of it as this years New York New York. But worst.
I liked great Gatsby at paper mill and I know it’s going to be even better on broadway. I think it’s worth seeing.

If you are open to something Off-Broadway, New World Stages has several Monday night shows including The Life & Slimes of Marc Summers, The Play That Goes Wrong and Sign Of The Times
I started a similar thread a few weeks ago and got a lot of helpful advice. Here’s a reply from Broadway Bob that steered me toward all available options. May be helpful to you as well.

You can search by date and it will list most of the on-stage events happening for that day. I have found it quite useful in the past for finding "odd" time performances! Good luck!"
That Monday, April 8 the Met has a performance of Fire Shut Up in My Bones.

i did not think HK lived up to the hype when it was at The Public, but ... worse than New York, New York?!?!?
the plot was annoying, and the sound was significantly over-amplified, but it was still two hours of wonderful Alicia Keyes music. And Shoshana Bean (despite the thin dialogue she was given to work with) really turned it in. tbh, i'd pick The Outsiders over HK, but -- unlike New York, New York -- i'd def say this is seeable just for the wonderful music and the several strong leads.

Thanks for all the recommendations! Sure seems like Hell's Kitchen is out - ha. Think I'll try to get in to The Outsiders...

I actually quite liked Hell's Kitchen at The Public. Not a perfect show, but a much better than average jukebox musical -- and some truly fantastic performances from Maleah Joi Moon, Shoshana Bean, Brandon Victor Dixon, and Kecia Lewis. I'm skeptical that they made the necessary changes to make the show truly outstanding, given their fairly quick transfer, but even in its current form, I still liked the show a lot more than I expected.
I'm not seeing The Outsiders for another week or so, so I can't compare yet, but I think either of those have the potential to be solid choices. And early reports are much stronger than the La Jolla reviews were, which leads me to believe that they're still working on the show to make it as strong as possible. It's definitely the new show that has me the most intrigued.
Agree that you can ixnay The Great Gatsby.
