You can never tell what you non-Texans might use as a base.
Kinda like the "barbecue" I had in Colorado. I've never even cared much for barbecue, but even I knew -- it wasn't barbecue.
I love gazpacho and often combine two recopes that I have, one of which is from the Moosewood Cook book. I like my gazpacho chunky.
For those of you who like it spicy, start with Mr. and Mrs. T's Spicy Bloody Mary Mix and add finely diced vegetables of your choice.
well, my chili ain't strict texas chili, cal. heck, purists might say it's not even chili...lol.

only canned beans. i am not soaking them. forget about it.

I first tried Gazpacho when I went to Spain as a kid. It was a very hot summer there and it was the most refreshing thing to have for lunch. The Spaniards serve it with croutons on top. I make mine every summer from ripe tomatoes, peepers, onions, scallions, cucumbers and a base of V8, vinegar, and vinegar./ Don't forget the fresh garlic.
I just made some gazpacho to go with dinner tonight. I used Mr. and Mrs. T's Spicy Bloody Mary Mix and added vegetables. It tastes good now, so I can't wait until it is well chilled!

Mine too ... after a depressing week, it has perked me up a bit!
6 ripe tomatoes, peeled and chopped
1 purple onion, finely chopped
1 cucumber, peeled, seeded, chopped
1 sweet red bell pepper (or orange or yellow) seeded and chopped
2 stalks celery, chopped
1-2 Tbsp chopped fresh parsley
2 Tbsp chopped fresh chives
1 clove garlic, minced
1/4 cup red wine vinegar
1/4 cup olive oil
2 Tbsp freshly squeezed lemon juice
2 teaspoons sugar
Salt and fresh ground pepper to taste
6 or more drops of Tabasco sauce to taste
1 teaspoon Worcestershire sauce
4 cups tomato juice
Same as MMS and add:
1 whole red onion
Onion powder
1/2 cup of homemade salsa.
Mandarin orange juice (Sounds gross but it gives a sweet kick)Two tablespoons of mandarin orange juice.
Top it off with chopped:
Red onion
Pepper
Seedless cucumber
Shreeded scallions and waterchestnuts and sprouts for color.

I tried to make this a few times but it never lives up to the gazpacho that my host mother made when I studied abroad in Seville. So, when I want it, I go to a local Spanish restaurant.
