I make a great gazpacho. It has lots of olive oil and balsamic vinegar and red, orange and yellow peppers--no green!
SOMMS Recipe:
6 ripe tomatoes, peeled and chopped
1 purple onion, finely chopped
1 cucumber, peeled, seeded, chopped
1 sweet red bell pepper (or orange or yellow) seeded and chopped
2 stalks celery, chopped
1-2 Tbsp chopped fresh parsley
2 Tbsp chopped fresh chives
1 clove garlic, minced
1/4 cup red wine vinegar
1/4 cup olive oil
2 Tbsp freshly squeezed lemon juice
2 teaspoons sugar
Salt and fresh ground pepper to taste
6 or more drops of Tabasco sauce to taste
1 teaspoon Worcestershire sauce
4 cups tomato juice
Combine all ingredients. Blend slightly, to desired consistency. Place in non-metal, non-reactive storage container, cover tightly and refrigerate overnight, allowing flavors to blend.
Serves 8.

I often make this when I am tired,a nd don't want to clean a pan:
Chop 3 tomatoes
2 cucumbers, peeled and chopped
small red onion, diced
2 bell peppers
1 clove minced garlic
1T EVOO
squeeze some lemon juice
4 cups v-8 tomato-based juice
add some crutons (garlic flavored are best), and maybe even some crab or shrimp.
It's nummy, and easy (if you don't mind a little chopping)

I make mine similar to SOMMS - with no green peppers (I don't like 'em). It's delish.
V8 makes a "spicy" version of the beverage - works quite well in gazpacho if you like it with a bit of a kick.
Ooh, touchme, I like that one even better. We should write a cookbook!

of course, in general papa! a splash behind each ear never fails to lure them in for the kill.

My tip is to roast & peel your peppers! Put the pepper on a gas burner on the stove and let the skin blacken. Turn pepper with tongs till all the pepper is black. Place into a plastic ziploc bag and let cool. Use a towel to rub off the blackened skin and then core and chop.
And I use only red wine vinegar to give it that tart taste. Chill it thorroughly but don't let it sit too long-- I think it's best the day it's made!
