Dinner has been ordered. Grilled cheese and chicken noodle. I honestly can't wait to have my tummy and body back to normal. I miss eating better, but my stomach is in "You never sleep, you never rest, why should I let you drink your milk?" mode.
Finishing one last paper...and then I'm done 'til 10 tomorrow.

I'm watching Bridget Jones's Diary for the seven billionth time, pretending I don't have an essay due tomorrow, and slowly taking root in my bed.
Ina Garten's Banana Crunch Muffins
3 cups all-purpose flour
2 cups sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 lb unsalted butter, melted and cooled
2 extra large eggs
3/4 cup whole milk
2 teaspoons pure vanilla extract
1 cup mashed ripe bananas (2 bananas)
1 cup medium-diced ripe bananas (1 banana)
1 cup small pieces walnuts
1 cup granola cereal
1 cup sweetened flaked coconut
dried banana pieces (optional) or granola cereal (optional) or shredded coconut (optional)
Preheat oven to 350°F.
Line 18 large muffin cups with paper liners. Sift the flour, sugar, baking powder, baking soda, and salt into the bowl of an electric mixer fitted with the paddle attachment. Add the melted butter and blend. Combine the eggs, milk, vanilla and mashed bananas, and add then to the flour-and-butter mixture.
Scrape the bowl and blend well. Don't overmix.
Fold the diced bananas, walnuts, granola and coconut into the batter. Spoon the batter into the paper liners, filling each one to the top. Top each muffin with dried banana chips, granola, or coconut, if desired. Bake for 25-30 minutes, or until the tops are brown and a toothpick comes out clean.
Cool slightly, remove from the pan, and serve.
SOOOO divine! I leave out the coconut because my dad hates it. I add a little more granola.

My guacamole today was just prefab Chipotle stuff. Decent, but a little heavy on the onion. Homemade is always best, of course.
I've never had non-homemade guac. I'm a little curious as to how it would taste.
I never put onions in my guacamole. They make me gag.
I don't like raw onions.
Premade guac is not usually chunky and rather bland. I love the fresh stuff. Actually, Trader Joes has some really good premade stuff.
