What is or what did everyone have for dinner? I dipped lettuce in hummus...weird, I know. But it was good.

Jeremy you should see me at the gym. That's all we talk about is food.
Jane, the shrimp cocktail sounds good, but kale is always so "sandy" to me. BTW how do you roast it?

I love hummus and carrots for dinner. I'll try the lettuce.
..but tonight I had a slice of pizza and a diet cherry Coke with rum.

Posted: 1/25/10 at 9:35pmIt's really so simple, Stockard-(and btw, I never found sandy kale!). anyway, wash the kale and remove the think stems. Toss it with EVOO, lol, put in 375 oven for 5 minutes, then turn over and cook for another 10 minutes til it's brown, thin, and crispy. Remove from oven, sprinkle with sea salt, and serve. YUM!!!!!!!

A roasted 6 squash medley over whole wheat angel hair and a 4-cheese (Grana Padano, Asiago, Pecorino Romano, Auribella) topping with a cranberry/cherry/pistacio/macadamia white chocolate dipped biscotti (Giada's recipe) for dessert. Mmmm.

P.S. On Sat night I had lettuce & 40-spices hummus w/ salsa and sour cream sides so you're not alone in the lettuce/hummus love!

Brilliant Jane! I've been looking for a simple kale recipe.
I was watching Barefoot Contessa earlier and was inspired. I made broccoli and onion pancakes, and poured a little soy sauce over them. They were delicious, and I certainly make them again.

My granddaughter was here so we made a huge pot of lentil soup with pepperoni. When her family came by we had that with huge chunks of wholegrain bread.
