Mister Matt has the most "correct" list.
Some of he shows on your list don't have traditional 11 o'clock numbers. (Several newer shows don't)
What is the exact definition of an "11 O'clock Number"? I would assume it's a song sung at 11 o'clock but none of the shows mentioned here go past 11 o'clock anyways...i'd appreciate a quick definition. thanks!

"Shows used to begin at 8:30, instead of 8. Writer's would put in a number to give the show a jolt as it headed to the homestretch and that number would fall around 11pm. Hence the name."
This is what Robbiej posted, and it's also what I've always heard was the reason.
Actually, in Aida, the 11 O' Clock Number would be Amneris's solo.

Certainly, Gimme, Gimme is an outstanding 11:00 number! Sutton delivered it with a conviction that gave me goosebumps upon goosebumps!

Justice - I agree completely about "I Know the Truth" - since I think it's Amneris' story anyway!
I think for Urinetown it would be more "Why Did I Listen to that Man"
Aida - Easy as Life
Seussical - All For You
The Producers - Betrayed
Mamma Mia - The Winner Takes it All
Thorougly Modern Millie - Gimme Gimme
Hairspray - I Know Where I've Been
Avenue Q - I wish I could go back to College (according to their performance on Live With Regis and Kelly, they said that song was their big 11 o'clock number
Little Shop of Horrors - Suddenly Seymore
The Boy From Oz - Once Before I Go
Wicked - No Good Deed
Taboo - Petrified
Caroline or Change - Lot's Wife
ya know in relistening to the avenue q recording i think schadenfreude is the 11 o'clock number. Its the point at which gary coleman accepts what he is basically "the world needs people like you and me/ who've been knocked around by fate/ 'cause when people see us/ they don't wanna be us/ and that makes them feel great" just my 2 cents
