The first that came to my mind was this one small part on the Sweeney Todd OBCR.
During "A Little Priest", there's the whole "It's piping hot, then blow on it first" shtick. And then the music swells while Sweeney and Mrs. Lovett laugh, and Len Cariou sings the "The history of the world, my sweet, is who gets eaten and who gets to eat!"
The way Len Carious sings the words "the history" stop my heart every single time. Add that to the malicious laughter and the orchestra, and you have major goosebumps. I think it's possibly my most favorite moment on a cast recording ever.
WOW, there are so many.
Dreamgirls- When they are singing the theme song, I love hearing the drums in the back when they go "Dreeeaaaaammm".
Jersey Boys- The opening of Dawn(Go Away). That driving drum beat just gets you into the song.
Bright Lights, Big City- In the opening song, when Jaime speeds up with the chorus near the end of the song when they are singing "I'm looking for the kind of girl who I'd call at eleven for some crusaunts and coffee, and we'd go some museum for a set or two of tennis with Elizabeth and Denis...." and then Patrick sings "I'm a menace to myself, dancing this close to heartbreak!" Aww, I love that part.
The Light in the Piazza- In "Passeggiata", when Matthew sings "Walk with me, in the place that I know! La Passeggiata."
Avenue Q- In "I Wish I Could Go Back To College" when Nicky and Kate are singing in the backround, and Princeton goes "I wish I could go back to college, how do I go back to college?!"
Wicked- In "The Wizard and I" when Elphie sings " Did that really just happen? Have I actually understood, this weird quirk I've tried to suppress or hide, is a talent that could help me meet the wizard, if I make good, so I'll make good.
Dirty Rotten Scoundrels- When Norb sings "I think we still deserve a haaaaaaaaaaaaaaaandddd!!" in Dirty Rotten Number.
Gosh, there are so many I want to post up here. I do agree with all of the Wedding Singer references though that have been said so far.
Ooo, I also love "Opening: I Hope I Get It" from A Chorus Line! I love it when the instructor goes "Right!Let's do the whole combination facing away from the mirror. From the top, a -5-6-7-8!" and then the music starts. And in the middle of the song when they are singing "God I really blew it, I really blew it, how could I do a thing like that. Now I'll never make it, I'll never make. He doesn't like the way I look, he doesn't like the way I dance, he doesn't like he way I..." and then they start dancing.

THE PHANTOM OF THE OPERA (OLC):
- "Prima Donna": Mme Giry's lines "She has heard the voice of the angel of music" and "This is a game you cannot hope to win!"
- "The Phantom of the opera": the strings in the background from "In all your fantasies" on, especially during Christine's "Aaah"'s, playing those staccato-ish notes.
WICKED:
- "Defying Gravity": the final verse from "So if you care..." on.
RAGTIME:
- "Till We Reach That Day": the whole last verse.
CATS (OLC):
- "Memory": the full verse as interlude, which was then shortened.
Les Mis - 'Javert's Suicide' on the 10th anniversary recording, the way Philip Quast hits that last note in "there is no way to go OOOOOOON" just gives me chills
Seussical OBCR - "Objection! OVERRULED!" from 'The People Versus Horton the Elephant'
Little Women OBCR - Jo's dialogue during 'The Fire Within Me' makes me want to cry
The Drowsy Chaperone - "Is it the monkey or my pedestal I love" Sutton Foster is just amazing and that's all there is to it.
A Man of No Importance - "When you're talkin' about this thing called art, makin' it your ideal, there is nothing you will not do to feel what it makes you feel"
The Wedding Singer - "No, I couldn't be more wrong"
Bat Boy Original Cast - "Heed the tale of a filthy freak, who's just like you"
And, I know it's not on the cast recording, but during the Drowsy Chaperone when the Overture suddenly tansitions from the record into the orchestra... gives me chills.
thejcm- the "random phantom" in the rocky horror line you mentioned (page one kiddies) is daphne rubin-vega
my favorites;
damn yankees revival- applegate's laughter ending act one, the girl in the shoeless joe reprise who sings "came a long looooong wayyy" over the harmony
the wedding singer; steven lynch's "woo!" in the second verse of "its your wedding day", laura benanti's "...so your back in the dumpster"

After about 2 and a half minutes in "One Day More" (LES MIZ), the whole big group harmony when each sings his/her own line, especially Eponine's "One more day all on my own!" I love it. Also, during the Finale when the ensemble quietly sings, "Do you hear the people sing..." So creepy. I love it.
From Spelling Bee, during "The I Love You Song," there's a note towards the end that all three characters get to (the note is while they're saying the word "Love" somewhere). It's just so haunting and amazing. Gosh.
The end of "He Is Not Dead Yet" from Spamalot, as well as the little Arthur/Lady run during "Act II Finale."
In "Saturday Night in the City", towards the very end, Amy Spanger yells, "Saturday night in the cit-tayyyy-AYYYYYY" during the Flashdance moment. I LOVE it.
In The Last 5 Years, during I Can Do Better Than That, when Sherie Renee Scott sings "and totally miiii-iii-iiiine" with a little flip or whatever it is. I find it really cool. And any time Norbert goes up to unwritten high notes, like during Movin Too Fast, the "oooohhhh OOOOH what else am I supposed to do".
Jersey Boys:
"And then one day, a tune pops into my head. I jot down some dummy words; Nick and I do a quick head arrangement. Then, we call the studio and sing it to Crewe--and the whole world EXPLODED!"(--then the intro to "Sherry" begins!)

Company revival - Another Hundred People. LaChanze's "Did you get my message 'cause I looked in vain!? Can we see each other Tuesday if it doesn't rain?"
3hree OCR - To Tame The Sky. When Eddie Korbich shouts "After all Gracie, this is America!" and Donna Lynne Champlin replies "And also New Joisey." Gets me every time.
Jersey Boys - Can't Take My Eyes Off Of You. The sax parts during the chorus.
Sweeney Todd revival - Kiss Me quartet. The "Anthony!-Todd!Todd?-Todd!-ANTHONY?!?!-Todd, eh!" bit. Lauren Molina's little squeal of joy is adorable.
Sweeney revival - the entire Final Ballad. Simply amazing.
