Amy Adams is 37. How old do you want the Baker's wife to be? I think mid 30s is the appropriate age for she and the Baker.

I wish people would believe in Toni Collette more as a "name." She's a movie star (Oscar nominated) in search of that one big hit that makes her have the illusive "box office appeal." She has everything else going for her already.

Even though I think Eddie Redmayne and Joseph Gordon-Levitt would be good choices, by the time they make this, they will surely be "too old."
Cinderella will likely be around 18, too. And I would look for a 12-year-old Little Red Riding Hood. It's hard to cast those roles now, because almost anyone suggested will be too old for them when they start filming. People change so much at that age.
Though Cinderella is probably technically that young, I'm not sure the role is quite as resonant when actually played that age. Ditto the princes. I'd put them all mid 20s (the princes maybe even older). Evan Rachel Wood has just the right amount of life experience that she brings to her work that I think (right now) would be about ideal for the role.

Casting can easily go a number of ways due to age.
Are the Baker/Wife 28 and childless or 40 and childless? There's nothing in the script that says either way.
Is the Witch's "youth" 25 or a glamerous 45? The script says youth and beauty. Is she actually 500 but looks eternally 30?
For example, Anne Hathaway could easily play Cinderella if the Baker and his Wife are 40ish. She could easily play the Baker's Wife if Cinderella/Jack are 17/18. She could play the Witch if they go for youthful and glamerous. It all depends on how they want to portray relationships. It's somewhat exciting because it makes possibilites larger.

The problem with having a 12 year old LITTLE RED is that "Hello, Little Girl" will be way too pedo-creepy and you also don't want her coming across as an annoying little 12 year old bitch. She is a little bitch but she can't be "annoying child actress annoying" if that makes sense.
Hyland is a superb suggestion.
I wanted Abigail Breslin initially, but I think she'll be too old by the time they film it.
EDIT: If you cast Little Red too old, it will be a completely ridiculous role.
And yes it SHOULD be a little bit "pedo." That's the creepy part. The song is called "Hello, Little Girl." She IS a little girl.

Come to think of it, there is no way they'll do that in a Disney film. Which means they will tone down the sexuality of the wolf and his "affection" for Little Red. Which means having a child in the role will not only be appropriate, you won't have to worry about wincing.
Ugh. They're going to turn this into a G rated "Childrens Edition".

I think many of you are underestimating the Disney name brand. Aside from the Pirates of the Caribbean films which have as much sex and violence as anything in INTO THE WOODS, Disney is also a co-producer of dozens of other projects including the Marvel Comics films (Avengers, Iron Man, Thor) and of Roth / Jerry Bruckheimer films (The Lone Ranger, Oz the Great and Powerful).
In short the Disney brand is not necessarily synonymous with G rated adaptations.
