I have to admit I like Roz. She acted the hell out of that role even if she only 'sung' one and a bit songs.
Cast Recording-wise, Ethel hands down. Though from what clips from that certain site I have seen, Angela's loco-ness was brill( though to be fair that is just clips, I really cannot judge an entire performance in that role based on a couple of clips) even though I have always been rather 'blah' about her CR

I've seen Lansbusry (10 times), Daly, Lavin, Peters, and LuPone (7 times) on stage. In movies, I saw Russell and Midler.
No one comes close to LuPone's perfection in the role.

To be fair, I've seen (on stage and film): Roz, Bette, Bernadette, and LuPone. My favorite of those I have seen is Bernadette. Her line "My daughter can do it" was devastating.

Lansbury for the most complex portrail of anyone else. Rose's Turn brought tears it was so heartfelt.

I LOVE Lansbury on disc. I enjoyed Bernadette's performance live. Merman is classic. Midler sucked (and I love me some Bette). Despite her musical inability, Russell's acting was fierce.
For me, LuPone is the definitive Madam Rose.

LuPone/Lansbury.
If I had to pick, LuPone.

Bernadette. I love the vulnerability she brought to the role.

So far, Ethel Merman (I was 15 years old). But I will not see Patti LuPone until April 25th, so I may change my mind.
