I second (or third or whatever) 'Simple'.
I don't see 'Every Day A Little Death' getting much attention. I'm quite fond of it. Same with 'Play the Music For Me' from Jelly's Last Jam.

don't really know if you could call this underrated, but at least it being fairly old and me not being around, it's at least not talked about much, one of my favs in the "god it's so beautiful" categories is "Sunrise, Sunset" from Fiddler. Very powerful.
Again, not knowing if I could really call it understated but I've recently fell in love w/ "Wheels of a Dream" from Ragtime.

Depends on who you talk to. I would argue that Sunday in the Park With George is often viewed as Sondheim's masterpiece, as it's arguably his most personal and artistic work. Move On, It's Hot Up Here and Putting it Together have become Sondheim standards. I agree with "Beautiful" though. It's my favorite song from the show and nobody ever mentions it or sings it.
