What I'm wondering is, how much of it will she actually get to show in the movie? I just hope Kiss Me is still in there.

No joke, my good friend just called me and was like, "OMG you'd appreciate this! My friend goes to the Scottish Academy and a friend of his got cast as Johanna in the Sweeney Todd movie!" Apparently she's known for about a week. Pretty awesome.

Anthony Stewart Head is indeed apparently attached to the project, but no one's saying what role. My guess is Fogg. I also heard a rumour (on here, so it was probably made up COMPLETELY from scratch!) that Timothy Spall would be the Beadle. If he can sing, then YES. Excellent casting choice!

According to Tim Burton's website, Christopher Lee is Jonas Fogg and Jim Broadbent is Beadle.
Edit: Anthony Stewart Head is rumoured to have been cast in the film, although I am not sure what part.
