I would see Once on This Island and The Band's Visit instead of Spongebob and Anastasia. (although both have lots of fans.)

Definitely see The Band's Visit - especially if you're going in June, it'll be post-Tonys, meaning many people will be trying to see it at that time. You could probably replace Anastasia of that bunch. I highly recommend keeping SpongeBob on your list (if it's still playing then). Plus, it'll be a fun, flashy show that'll break up the more classic fare you plan on seeing.

Thanks for the input so far! It seems I for sure need to make room for The Bands Visit and Once on this Island. As far as Caroseul and My Fair Lady...which of those is most recommended? And is 3 Tall Women as good as I hear it is? I just adore Laurie Metcalf.

Sounds like you already agree, but I will definitely echo Band's Visit and Once On This Island, especially because the latter could never tour in its current state - it needs to be seen in the round, in the sand, in this theatre. So magical.
Between Carousel and My Fair Lady, it's a tough call since neither has started previews yet, so any opinion is going to be an educated guess. Carousel has going for it a stellar cast & creative team, particularly a focus on including gifted artists from outside the Broadway world, like opera star Renée Fleming as Nettie, New York City Ballet principal Amar Ramasar as Jigger, NYCB soloist Brittany Pollack as Louise, and choreography by NYCB's Justin Peck. (So the ballet sequences will certainly be fantastic.) My gut says that anyone who enjoyed American in Paris will also likely love this, but it also has the added (Broadway) star power of Jessie Mueller, Joshua Henry, Lindsay Mendez, and more.
My Fair Lady's biggest selling point is the pedigree of the Bartlett Sher/Lincoln Center partnership. All of the classics that team has revived have been critically acclaimed and pretty successful, and there's no reason to expect this one to be any different. It will likely be a lush but faithful interpretation of the original.
In short, it's hard to say which will be the "better" production, because they'll probably both be great - in this case I'd just go with your gut and which one you want to see more.

At this point, I'd go with My Fair Lady. Lincoln Center Theater's production should be something to behold: a very interesting cast, a 30 piece orchestra, the huge stage/thrust stage, and not to mention that Bartlett Sher is directing. He has a talent for digging into old musicals and finding something fresh that speaks to us about today along with his interesting way of setting up/staging a scene.
Carousel on the other hand, it's hard to tell how that is going to turn out with Jack O'Brien at the helm. And no, I'm not talking about his inconsistent track record lately (which I've gotten a lot of flack for on these boards), but mainly the fact that he's never really been viewed as a genius when it comes to revivals (at least not like Sher).
